The first new concept from Gibsons Restaurant Group in more than a decade, Gibsons Italia, is the iconic Chicago chain’s take on modernizing the traditional steakhouse. Opened last October and designed by Mark Knauer, the expansive multi-level space overlooking the west bank of the Chicago River offers a bar and lounge, a main dining area, and a rooftop lounge with a retractable glass enclosure for private events.
