Universal Orlando's dining and entertainment complex, CityWalk, celebrated the opening of its newest restaurant attraction in December, The Cowfish.

First established in North Carolina by Marcus Hall and Alan Springate, the concept brings together burgers and sushi in a vibrant, casual-dining venue with full bar. The restaurant's menu features sushi rolls, unique craft burgers and a mash-up of the two in a section called "Burgushi," which includes sushi rolls created using burger components and pick-up style sandwiches created using sushi ingredients.

The three-story restaurant sits next to a Red Oven Pizza Bakery, with a second-floor back entrance located across from Bob Marley: A Tribute to Freedom. It includes outdoor deck seating with great views of CityWalk. Inside, the ambiance is marked by colorful décor, custom artwork, interactive aquarium screens, fishbowls swimming with cowfish and vibrant music.
Hall and Springate operate two additional The Cowfish units, one each in Charlotte and Raleigh, N.C. The Orlando restaurant's opening rounds out a year-long expansion to Universal CityWalk. Other new venues recently added as part of the expansion project include VIVO Italian Kitchen, Red Oven Pizza Bakery, Antojitos Authentic Mexican Food and Hot Dog Hall of Fame.
