Eataly Las Vegas opened in December. It is the brand’s sixth location and first to remain open 24 hours a day.

The 40,000-square-foot culinary destination sits on the Las Vegas strip and serves as Park MGM’s main entrance. It features two sit-down restaurants, one counter-to-table concept, six takeaway counters, a cafe, three bars, an educational chef’s table and more than 5,000 retail products. Executive Chef Nicole Brisson curates the chain’s mix of traditional, authentic Italian food.

Eataly Las Vegas continues Eataly’s overall brand philosophy of “Eat. Shop. Learn.” The new location introduces several new experiences to U.S. customers, most notably Cucina del Mercato, or “Kitchen of the Market.” This open counter-to-table area features six different fresh food counters that encourage guests to eat what they shop and shop what they eat. For example, at the La Macelleria: Butcher & Kitchen counter, guests can choose a cut of meat from the case and take it home or they can watch the cooks prepare it for them on the spot. The same idea carries over at each counter, with fare that includes La Pescheria: Fishmonger & Kitchen and La Salumeria: Cheesemonger & Kitchen. Other counters include one dedicated to Italian street food and a fresh pasta station where guests can see pasta makers knead, roll, cut and form intricate shapes by hand.

Of course, it wouldn’t be Las Vegas without a robust bar program and three new venues will showcase Italian cocktails and spirits. Located at the main entrance, L’Aperitivo offers quintessential Italian cocktails like the Negroni. Further inside, Gran Caffè Milano is an upscale, full-service Italian bar that draws inspiration from the elegant cafes of Milan. This high-end yet approachable bar offers food for all dayparts and features a replica of a famous bull mosaic in Milan. L’Enoteca is Eataly’s premier bar and offers a selection of more than 80 Italian wines.

Other dining options include a takeaway pizza place, a pastry shop, and gelato shop, among others. The wine shop boasts an extensive Italian wine list with more than 400 labels represented, hailing from all 20 wine regions of Italy.
